The ingredients for the Paliria Dolmas with tricolor Quinoa & roasted vegetables are

1 package of 200g Paliria quinoa dolmas

1 diced zucchini

1 diced eggplant

1 diced yellow pepper

1 diced red pepper

1 onion in thin slices

2 cloves of garlic, finely chopped

8 cherry tomatoes cut in half

4 tablespoons of olive oil

100 ml. vegetable broth

Salt & Pepper

For serving:

2 tablespoons chopped spearmint

In a large pan, pour the olive oil together with the onion and garlic and sauté for 1 minute, until glossy.

Then, add all the other ingredients except the cherry tomatoes, stir over high heat for another 3 minutes and add the cherry tomatoes.

Finally, add the vegetable broth and continue cooking on medium heat for another 10 minutes.

Remove from the heat and add the chopped spearmint. Mix and serve together with the dolma with tricolor quinoa.
