The ingredients for the Paliria chickpeas Moussaka are

2 packages of 280g  Paliria Greek Isalnd chickpeas

2 tablespoons chopped parsley

2 tablespoons olive oil

Juice from 1 lemon

For the béchamel:

4 tablespoons of olive oil

2 tbsp flour

500 ml. vegetable broth

Salt & pepper

For the filling:

4 eggplants cut into 1 cm round slices

1 jar of Red Roasted Peppers in brine 680 g. Paliria

Olive oil

Salt & pepper

4 tbsp breadcrumbs

For the recipe of the Paliria chickpeas Moussaka, follow these steps

Place the eggplants on a baking tray lined with parchment paper, drizzle with olive oil, salt and pepper and bake in a preheated oven at 180°C for 20 minutes.

Mix all the ingredients of the filling with the Paliria chickpeas until combined. In a baking pan, lay out the eggplants, top with the chickpeas and finally the peppers.

For the béchamel, heat the olive oil, add the flour and mix well. Add the lukewarm broth, salt and pepper and stir until the béchamel thickens.

Spread the béchamel over the peppers and sprinkle with some breadcrumbs. Bake in a preheated oven at 180°C for about 40 minutes, until the surface is golden brown.
