The ingredients for the Chickpea balls from Paliria Chickpeas are

1 package of 280g Paliria Greek Island chickpeas

2 tbsp grated rusk

1 tablespoon of olive oil

1 tsp grated marjoram

1 tablespoon chopped parsley

Juice of ½ lemon

Seed oil for frying

For serving:

10 cherry tomatoes, cut in half

1 cucumber finely chopped

1 spring onion finely chopped

2 tablespoons olive oil

Juice from 1 lemon

Salt & pepper

Lightly mash the Paliria chickpeas in the mixer. Be careful not to turn them into a puree and transfer the chickpeas to a bowl along with the rest of the ingredients. Knead gently until you get a uniform mixture that can be shaped into balls.

Shape balls the size of a large walnut and fry them over medium-high heat for 4 minutes on each side.

Prepare the cold salad by mixing all the ingredients together. Serve the chickpea balls accompanied by the salad.
